    THE PROCESS IN MOTION

What is left to do to the dry bean?

    1. Resting in parchmentOnce dry, the bean first rests in its parchment.
    2. HullingHulling removes the parchment: the bean comes out bare.
    3. Monsooning and agingMonsooning and aging change the bean further, and the cup with it. This page does not say how: the chapter’s sheets describe it.
    4. SortingFinally, all the sorting decides what goes and what stays.

To remember: Even dry, the bean is not done changing: resting, hulling, monsooning, aging and sorting still change the cup.
