    Drying

    THE PROCESS IN MOTION

    What decides the drying?

Start the scene or choose a stage. The animation simplifies the mechanism; what follows gives the details and the available references.

    The route removes

A processing route decides what is removed from the fruit, and therefore what is left to dry.

    1. The route removesA processing route decides what is removed from the fruit, and therefore what is left to dry.
    2. Drying drives out the waterDrying, for its part, decides how the water is driven out of what remains.
    3. Two dimensionsThe two choices are independent, and that is the whole point of separating them: the route on one side, drying on the other.
    4. Same bed, same handlingA washed coffee is dried on a raised bed exactly as a natural is dried there. The raised bed is an elevated table with a mesh bottom, where the coffee dries in a thin layer, with air on both sides.
    5. The surface matters moreThe choice of surface, patio, bed, greenhouse or mechanical dryer, changes the duration, the evenness and the risk of mold far more than the choice of route.

To remember: The route decides what is removed, drying decides how the water leaves; and the surface matters more than the route.
